Oh my gosh...chicken Caesar salad! One of my absolute favorite salads are grilled chicken Caesar salads. Well that and Greek chicken salad. I absolutely adore the crisp lettuce and juicy grilled chicken combination smothered in zesty Caesar dressing and topped with crunchy croutons and savory parmesan cheese. I'm salivating now.
Well I always get my recipe ideas at the strangest times. One time I actually stepped into the front office at my work and randomly shouted, "horchata ice cream and cinnamon chips!" Another time I was getting ready in the morning and thought, "I think I'll do a gluten free lemon meringue pie in mini cups." (Recipe to come by the way.)
So yesterday after my son's soccer practice, I couldn't stop thinking about a fresh chicken Caesar salad. But I wanted a bit more substantial meal. But the same flavor. So I thought of tacos. Then I wondered about croutons. And then I thought, I'd make the tortillas taste like croutons. Yep, I went there.
These tacos are hands down the best chicken Caesar salad you could fit in a tortilla-my humble opinion. And it's not your average wrap. Nope. I brushed the tortillas in a yummy olive oil blend with garlic and parsley. And I used the same dressing for the chicken. I'd intended to use Ken's Creamy Light Caesar dressing-love that stuff-but I had none, so I made a quick one from canola oil, vinegar and lemon juice, and garlic, Parmesan and seasonings. I served these with a side of black beans dressed up with peppers and tomatoes. (Recipes below.)
A gluten free meal, full of healthy omegas from the olive oil and lean protein from the chicken, this meal will leave you guilt free and satisfied. This makes it extra beneficial for kids with autism as well. Plenty of thinking power in this food!

Chicken Caesar Tacos
Ingredients:1 lb boneless, skinless, chicken breast
5-7 leaves romaine lettuce, shredded
15 corn tortillas
1/2 cup light creamy Caesar dressing or any Caesar dressing of choice
3 Tb olive oil
3 cloves garlic, pressed
1 Tb parsley, dried
1/2 tsp salt, plus additional
1/2 tsp pepper, plus additional
1/3 cup grated Parmesan cheese
Directions:
Combine olive oil, garlic, parsley, salt and pepper in a small bowl.
Heat a skillet over medium heat. Pour half of olive oil mixture in skillet. Set aside other half for later use. Season the chicken breasts lightly with salt and pepper. Add the chicken breasts to the skillet and grill in oil, about 4 minutes, until lightly browned. Turn chicken breasts over. Cover and reduce heat to medium low. Continue cooking until chicken is cooked through, juices running clear and chicken is no longer pink, about 8-10 minutes.
Remove chicken from skillet to a platter and allow to cool slightly.
Meanwhile while chicken is cooking, heat each tortilla on a preheated griddle set over medium heat on one side. Brush top sides with remaining olive oil mixture and flip tortillas. Allow tortillas to grill slightly, but do not over cook as they will burn. Stack tortillas in a tortilla warmer to keep warm.
Chop chicken breast into small pieces. Arrange 3 tortilla on each of 5 plates, oiled side against the fillings. Divide shredded romaine lettuce and chicken breast onto each tortilla. Top each taco with a scant half tablespoon Caesar dressing and a teaspoon of grated Parmesan cheese.
Serve with a side dish of choice. We opted for black beans with diced tomatoes.

Simple Black Beans with Peppers and Tomatoes
Sauté 1 chopped bell pepper, 1 sliced jalapeno, 1 smashed garlic clove in 1 tablespoon canola oil. Add 3 small chopped Roma tomatoes and 1 can of black beans, un-drained. Cover and simmer for 20 minutes until flavors are mingled.
Quick Caesar Dressing
2/3 cup olive oil, 3 Tb vinegar, 1 Tb lemon juice, 1 clove pressed garlic, 2 Tb parmesan cheese, 1 tsp sugar, 1/2 tsp whole grain mustard, pinch fresh cracked black pepper. Whisk all ingredients and serve.
