India Meets Family Tradition

The first time I tried Indian food I fell in love with it.  My husband and I went on a date and tried multiple things like Samosas, Lamb Curry-which was the first time I ever tried lamb!-and various chutneys with naan.  I especially enjoyed the vegetable curry, so I made a sweet potato coconut curry to go along with this meal.  I also made a rice cooker full of fresh steamed white rice.

Making a meal with much savory spices while trying to feed children can be tricky, so I found a way to make my finicky sharks happy, but feed my husband and myself the delicious goodness of Indian food.  And there was not much extra work involved.  You really only need one extra bowl and a couple more ingredients.

1/3 cup plain yogurt
1/3 cup mayonnaise
2 Tb Parmesan cheese
1 tsp tarragon
1 tsp poultry seasoning
salt and pepper
4 chicken drumsticks
cooking spray

Whisk all ingredients together and thoroughly coat 4 chicken drumsticks with marinade.  Marinate 30 minutes to overnight.

Spray cooking sheet or baking pan with cooking spray and lay out chicken evenly apart.

Bake in a preheated 425F oven for 45-60 min, turning after 30 minutes, until browned and no longer pink in the center.

This chicken was a big hit with the family.  The boys really liked the simple family style chicken and my husband and myself really enjoyed the vibrant spices in the Indian chicken.

The sweet potatoes added a nice hearty sweetness to the meal with the steamed white rice holding all together nicely.

*Finicky shark update: We heated up leftovers and my son ate the rest of the Indian chicken, leaving for none my husband.  Kid approved flavors!
