Goat Cheese Gets Wrapped Up with Baba Ganoush and Veggies

I recently found a new love-Baba Ganoush (sorry hummus) and am finding wonderful ways of using it wherever I can.  After a morning at the doctor's for my son and a quick trip to the local Fresh and Easy for some crisp new veggies and whole grain bread counterparts, I was craving a refreshing lunch.

I just bought some Lavash Wraps-they looked so good-and had full intent of making a veggie wrap with the Baba Ganoush I had in my fridge.  This is what I created and not one morsel remained on my plate.  Guilt free and clean eating all the way!

 

Spinach and Tomato Lavash Wrap with Goat Cheese and Baba Ganoush

2 oz soft goat cheese
1/4 cup Baba Ganoush
1 tomato, sliced in thin wedges
1 cup spinach
1 tsp olive oil
Salt and pepper

Spread lavash wrap with goat cheese. 



Spread on baba Ganoush and top evenly with tomatoes.  (Oh look, a stray olive in that baba ganoush!)
 

Spread spinach evenly. Drizzle with olive oil and dashes of salt and pepper. 
 

Roll tightly, short end to short end.  Cut into 4 slices. 



 Serves 1 or 2.  I ate the whole thing at just around 400 calories. 

Now I'm just thinking, 'when can I have another?'
