Back to School and Gluten Free


The first day of school is a special and memorable day for kids.  Today was Jesse's first day of second grade and I wanted to make him some special pancakes.  But I wanted him to be on his best first-day-of-school behavior.  So I decided to go Gluten Free and whipped these up this morning.  They were simple, fluffy, and nutritious and all the boys gobbled them up. 

Back to School Gluten Free Pancakes

1 1/2 cups brown rice flour
1/4 cup oatmeal
2 Tb ground flax
2 Tb sugar
1 tsp baking powder
Pinch salt
1/2 cup Nonfat Plain Greek Yogurt
1 1/2 cups milk
1 egg
Cooking spray
 
 Put all dry ingredients in a large bowl and make a well in the center.  Add the wet ingredients to the well.  Mix until just combined. 


Heat pancake griddle over medium heat. Spray lightly with cooking spray and measure pancake batter into 1/4 cups onto griddle.  Flip when bubbles form around the edges, about 1 min.  


Cook through, about 2 min more til lightly browned.  


Remove to platter; keep warm in oven or under clean towel.  Top as desired.  
 
Makes 16 pancakes.  Prep 5 min.  Cook 20 min.
 
Topping Ideas:
Peanut butter and honey (pictured)
Cool whip and strawberries with chopped nuts
Nutella and bananas
Cottage cheese and peaches
